Hazelnut Shortbread/Cookies

A quick simple recipe to help you use up that left over hazelnut meal that you might have after making my Nutella Tart recipe.

These cookies have a slight chew to them and are full of yummy hazelnut flavour.

What you’ll need

Makes approx 18 pieces

  • 39g unsalted butter, softened
  • 1.5g fine salt
  • 3g vanilla extract
  • 38g white sugar
  • 10g corn starch
  • 9g milk powder (full fat)
  • 55g hazelnut meal
  • 50g ap flour

Making it

Mix everything minus the flour together in a bowl with a spatula

Add flour and fold it in

Press the dough together and pat/roll to 1.5cm thick

This dough tends to crumble apart but fret not, just squish it with your hands to make it stick together and you will be fine.

Cut with a 3cm circle cookie cutter

Brush with egg wash (1 whole egg beaten)

Bake at 120C for 45mins.

Let cool and enjoy.
